-NAKAOROSHI Journal#7-

I’m Kurihara from Echitora, a specialist tuna broker. While fresh and frozen tuna from around the world is always available at Tsukiji, as we enter the real fishing season which begins in Autumn.I’d like to introduce you to some of our Boston caught Pacific bluefin tuna.

Right now, every day around 30 bluefin tunas arrive at Tsukiji from Boston. The largest of them can weigh up to 300 kilograms (or about 660 pounds).

The fishermen struggle to catch the fish on small two-person boats. A few decades ago, they were catching the fish not to make a living, but simply for sport. However, after receiving much acclaim for the quality of their catch, they began exporting to Japan.

While today, tuna are processed according to the proper procedures, when I first came to Tsukiji 25 years ago, it was not unheard of to find shotgun bullets inside the fish.

Boston tuna feed on good quality food, and more and more of these tuna exhibit a wonderfully deep flavor in both their fatty and lean meat. If you have the opportunity, be sure to try this deliciously rich tuna, brought to you by the hard work of fishermen abroad.

Thank you
